This particular method of cultivating oysters in France was pioneered by Francis Helie in the 1950s. <br />

He discovered the basis of this technique while recuperating in Jersey from wounds sustained while serving in the French army during the Indochina War. <br />

This thriving company is now run by his sons Thierry and Michel, and his grandson Xavier.
